shawn wanted pie. imagine that. we had apples. but we also had peaches and raspberries. he wanted peach raspberry. none of my cookbooks had a peach raspberry pie. so, i improvised. and made two mini pies. shawn says they're delicious.
pie crust
1 1/8 cup flour
1 teaspoon sugar
1/2 teaspoon salt
8 tablespoons cold butter
3 tablespoons water
mix dough until sticky. roll into a ball. wrap in plastic wrap and press into a disk. refrigerate for a half hour. cute into 4 equal parts. roll out 2 parts of the dough and put in mini pie plates. roll out the other two for pie tops. cut heart shaped holes in the center. set aside.
filling
1 large ripe peach, skinned and sliced
1 handful of ripe raspberries
1 tablespoon of cornstarch
1 tablespoon of sugar
1 teaspoon of lemon juice
1 teaspoon of vanilla
pinch of salt
preheat the oven to 450 degrees. toss the filling ingredients and fill the mini pie plates. put a pat of butter on top of the filling. put the dough for the top over the filling and seal the pies. brush tops with milk and sprinkle with sugar. bake at 450 for 10 minute and then turn down the oven to 350 for another half hour.
i kind of like that they spilled a bit and the heart looks a bit bloody. fits with the horror movie festival that's currently going on in our house.
